The classic italian grating cheese, aged for 10 months. This is a hard crumbly cheese that is the true original of what "parmesan" style cheeses aspire to be. Made from Cows milk in the north of Italy. The perfect enhancement to mediterranean dishes, it may be eaten in slivers, or grated and accompanied by white wines or semi-sparkling reds. It is used for all courses, from appetizers to desserts: as an aperitif, on first courses, as a single dish, with “carpaccio” or accompanied by fruit and vegetables. Try it crumbled over fresh fennel.
