Taleggio is a semi-soft, washed-rind cheese traditionally from the Valtaleggio region in northern Italy, near Lombardy. Mauri ages their Taleggio for 40-50 days in the natural grottoes in Pasturo in Valsassina, with attentive cheesemakers and expert technicians following it at every stage of the production process, strictly respecting tradition. It is characteristically aromatic yet mild in flavour and features tangy, buttery notes with a fruity finish. The texture of the cheese is moist with a very pleasant melt-in-your-mouth feel. Taleggio pairs nicely with a wide range of Italian red and white wines, and is particularly good used in Risotto and with Polenta.
