Fontina is a cow's milk cheese traditionally made in the Aosta Valley in the Alps. It is a semi-firm cheese with a smooth texture and a fruity aroma from its washed rind. Try it melted with polenta, use it like raclette or make an extra fancy toasted sandwich.
